Pure Kashmiri Saffron  (Kesar)
Saffron is a spice derived from the flower of Crocus Sativus, commonly known as the Saffron Crocus. It is also know by other names like Zafran or Kesar. Crocus is a genus in the family Iridaceae. Each saffron crocus grows to 20–30 cm (8–12 in) and bears up to four flowers, each with three vivid crimson stigmas, which are each the distal end of a carpel. Together with the styles, or stalks that connect the stigmas to their host plant, the dried stigmas are used mainly in various cuisines as a seasoning and coloring agent. Saffron is one of the world's most costly spices by weight.

There are only few places in the whole world where saffron grows. Kashmir has the proud privilege of being one of these places. Kashmiri Saffron is the world’s finest saffron and the most expensive. In Kashmir, Saffron is grown in Pampore which is a small town, 13 KM from Srinagar. The Saffron plant is very small and its flower is the only part which is seen above the ground. It can take 75,000 saffron blossoms to produce a single pound of saffron spice. The blooming time of this flower is autumn. Saffron has a unique sweet smell. 


It takes approximately 150,000 crocuses to produce one ounce of saffron. 


    -Why is saffron good for me?
It has long been used in traditional medicine around the world, and modern scientific study suggests that saffron could also have a role to play in fighting disease. Research suggests that the carotenoid compounds responsible for saffron's striking colour (safranal, crocetin, crocin) could play a part in inhibiting the growth of tumours. The active constituents in saffron could help alleviate gastric problems, heart disease, insulin resistance, depression, premenstrual syndrome, insomnia and anxiety. Eating saffron also appears to help vision by retarding the degeneration of the retina that occurs with age.
